Our Identity

Through continuous study, research, and updates, we practice conscious and sustainable agriculture, preserving the flavors and health benefits of our products. Our company manages about 50,000 olive trees, all located in Umbria, in the historic olive-growing area from Assisi to Spoleto, including Trevi. The varieties cultivated are typical of our region: Moraiolo, Frantoio, Leccino, San Felice, and Dolce Agogia. The current context reminds us of the urgency to address climate change not as mere statistics but as a real threat to our cultural heritage and the traditions that define our identity. Those in the agri-food sector, like us, have a duty to adopt environmentally friendly and sustainable methods to create productive ecosystems for everyone’s benefit. Over the years, we have restored abandoned olive groves, revived once-neglected hills rich in potential, and planted new olive groves sustainably, avoiding super-intensive cultivation.

The Mill: Our Jewel

While quality olives are essential for quality oils, the same applies to the mill (and the miller). Our olives are crushed within 12 hours of harvest using state-of-the-art machinery constantly developed and updated in collaboration with the Department of Agricultural, Food, and Environmental Sciences at the University of Perugia. This collaboration has led to new extraction techniques that improve the quality of our oils. An example is the TAPO Project, through which we developed new technology to rapidly cool the crushed paste, enhancing the organoleptic profile of our oils.

The Art of Blending

Once produced, all oils are meticulously tasted and carefully blended by Stefano and Andrea. The goal is clear: every oil with the Frantoio Gaudenzi brand must be perfect, with the right balance between bitterness and spiciness, combined with optimal aromatic persistence to offer an unforgettable sensory experience.
