Our Cultivars: Tradition and Diversity in Every Drop

Our extra virgin olive oil is born from a careful selection of the finest native Umbrian cultivars. Each one offers distinct sensory characteristics, giving our oils a rich variety of aromatic profiles—authentic expressions of our land.

  • Moraiolo
    The most widespread cultivar in Umbria, appreciated for its resilience and naturally high antioxidant content. Though common across central Italy, it reaches its finest expression in the rocky soils between Assisi and Spoleto, especially around Trevi. It produces bold, complex oils with notes of fresh grass, artichoke, and spice.
  • Dolce Agogia
    A rare and precious cultivar native to the Lake Trasimeno area. It’s known for producing smooth, well-balanced oils with a delicate profile and hints of green almond and freshly cut grass.
  • Frantoio
    A classic and versatile cultivar, widely grown throughout Italy. It brings elegant, harmonious notes to blends, with medium to high fruitiness and a clear almond finish.
  • Leccino
    This early-ripening cultivar is prized for its soft, rounded flavor. It yields sweet, balanced oils with gentle almond notes and a smooth, delicate profile.
  • San Felice
    A lesser-known but highly aromatic cultivar from the area around the Abbey of San Felice near Giano dell’Umbria. It produces medium-fruity oils with herbaceous aromas and fresh almond notes—well-balanced and complex.
  • Borgiona
    A rediscovered cultivar once nearly lost due to its cultivation challenges. Today, it’s celebrated for its bold structure and uniqueness—it’s the only Umbrian cultivar known for distinct tomato notes in the oil.
  • Tendellone
    A rare native Umbrian cultivar that yields delicate oils with subtle notes of almond and artichoke.

  • Classe 24 – Made from Borgiona, this rare cultivar offers a truly distinctive, authentic profile.
  • Chiuse di Sant’Arcangelo – Produced from 100% Moraiolo, this label represents the height of Umbrian olive growing: bold, structured, and unmistakable.
  • 6 Novembre – The cultivar changes every year, chosen to celebrate the legacy of Vittorio Gaudenzi, the founder of our mill.

 

 

Blends: The Art of Balance and Selection

Blending is one of our signature skills. By carefully combining different cultivars, we create oils that are harmonious, versatile, and crafted to enhance every dish.

  • Seven – DOP Umbria – Colli del Trasimeno
    A balanced blend of Dolce Agogia, Moraiolo, Frantoio, and Leccino—rich in aroma, perfect for everyday use.
  • 89/93 – DOP Umbria – Colli Martani
    A versatile, personality-filled oil for those who value elegance and depth.
  • Casalontana – DOP Umbria – Colli Assisi-Spoleto
    High in Moraiolo, this oil is a bold tribute to the territory’s strongest character.
  • Quinta Luna
    One of our signature oils, made from early-harvest olives to capture brightness, freshness, and intensity.
  • 1950
    Our classic oil, produced from more mature olives harvested in early November—round, smooth, and deeply traditional.
