Where Everything Begins
Great olive oil starts in the soil. We cultivate more than 50,000 olive trees across the historic hills between Assisi, Trevi, and Spoleto, a region deeply rooted in the art of olive growing.
Through constant study, research, and an evolving understanding of sustainable agriculture, we’ve created a model that respects both the land and the people who live on it.
We grow only native Umbrian cultivars—Moraiolo, Frantoio, Leccino, San Felice, Borgiona, Tendellone, and Dolce Agogia—each one contributing its own personality to our oils. The result is a range of authentic flavor profiles that reflect the richness and diversity of our region.

The Mill: our technological soul
To produce truly exceptional olive oil, it takes more than just great fruit. The process matters just as much.
That’s why our olives are pressed within 12 hours of harvest, using cutting-edge equipment developed in close collaboration with the Department of Agricultural, Food and Environmental Sciences at the University of Perugia.
This partnership has allowed us to pioneer innovative extraction techniques that elevate the quality and consistency of our oils, year after year.
Project TAPO: innovation that preserves nature
One of the most important outcomes of our research is Project TAPO—a groundbreaking system that rapidly cools the olive paste during extraction.
This preserves the oil’s polyphenols, enhances its aromatic complexity, and ensures greater stability and nutritional value.
The result? An oil that’s richer, more vibrant, and better for your health.
The Art of Blending
Once the oil has been extracted, the real magic begins. Every batch is carefully tasted and evaluated by Stefano and Andrea, who bring together the best of each variety to create something unique.
Their goal is simple but demanding: every bottle that carries the Gaudenzi name must strike the perfect balance between bitterness and spice, with a lingering aroma that makes each tasting unforgettable.
